Brussel Sprout Cilantro Jalapeño & Lime Salad

Ingredients

Brussel sprouts

Cherry tomatoes

Tortilla chips

Jalapeño (1/2-1)

Cilantro (1 cup)

salt

pepper

4 limes

olive oil (1/2 cup)


Chop off brussel sprout stems. Then thinly slice/chop the brussel sprouts. Put into a serving bowl.


Take desired amount of tortilla chips and smash into small pieces. Set aside.


In a blender, add the cilantro, jalapeño (if you don't like it too spicy either de-seed a full jalapeño or just use half of one), squeeze 4 limes, and add the olive oil. Season with salt and pepper.


Liquefy everything in the blender. Pour desired amount on top of salad (a little bit at a time, mix as you pour, it shouldn't be heavy). Top with tortilla chips.


Serve and enjoy!
