Ingredients
Tomatoes (3 large)
pepper
salt
basil (1 cup)
fresh mozzarella balls (1 container)
Penne Pasta (1 lb)
oil
garlic (2 cloves, chopped)
grated parmesan cheese
Boil a pot of salted water on high heat. Then throw the pasta. Once the pasta is cooking in the pot, start these next steps.
Finely dice the basil.
Slice mozzarella balls into quarters.
Chop tomatoes into bite size pieces.
In a stainless steel deep dish pan, on medium heat, add a healthy amount (about 1/4 cup) of oil, the garlic, and season with salt and pepper. Let it cook for about 1 minute, then add the chopped tomatoes. Mix around and let tomatoes cook for 2-3 minutes.
The pasta should be done and drained by now. Put the drained penne pasta into the stainless steel deep dish pan with the tomatoes. Mix all around until pasta is coated. Add the basil and mix around. Season with salt and pepper. Then add the mozzarella and mix around. Then sprinkle a healthy amount of grated parmesan cheese and mix around.
