(30-40 minutes)
Ingredients
Chicken (1.5 lbs)
broccoli (2 heads)
salt
pepper
sesame seeds
garlic (2 cloves, chopped)
butter
pasta (campanelle, 1 lb)
chicken broth (1 cup per lb of pasta)
Chop Broccoli into desired size - I like them smaller.
Pound chicken before cutting into small pieces. Cut chicken into desired size.
Put some olive oil on the bottom of a big pot and turn on medium-high heat. Add garlic, salt, pepper.
Add the chicken and cook until 90% cooked through (Mostly white, maybe a touch of pink showing).
Add chopped broccoli to the pot of cooked chicken. Season with salt and pepper again. Stir for 2 minutes. Then add a tablespoon of butter.
Stir for another 3 minutes so the butter melts around the pot. Add 1 cup cup of chicken broth (or more, depending on how soup-y you like it!) Turn heat on simmer, and let cook while you boil the pot of water and make the pasta (approx 10 min cooking time).
*Note - this is a meal I will cook on days I won't be home to cook during dinner time. Cook the chicken and broccoli, then turn heat completely off. Take your kids to baseball practice or whatever! and then come home, add the chicken broth, turn it up to simmer/low heat and let it finish cooking while you boil the pasta (only 10 min cooking time when you get home!)
