Ingredients
Ground Chicken (1 lb)
frozen veggies (1/2 bag)
large tortillas (6)
Shredded cheddar cheese (1 bag)
pepper
salt
garlic powder
chili powder
paprika
cumin
olive oil
In a pan, on medium high heat, add ground chicken and season with salt, pepper, garlic powder, chili powder, paprika, and cumin. Cook chicken until fully cooked through, breaking into very small pieces with your spatula.
In another pan, add olive oil and season the pan with salt, pepper, garlic powder, chili powder, paprika, and cumin. Then add the frozen vegetables and mix around while cooking until veggies are completely seasoned and cooked through.
Remove chicken from the pan, and wipe clean with a paper towel.
Add a splash of olive oil to the pan, turn heat on medium high, and lay one of the large tortillas on the pan. Sprinkle a good helping of cheddar cheese all around the tortilla leaving about 1 cm clear of any cheese on the edges. Then your desired amount of chicken and veggies on top. Finish with another layer of cheddar cheese. Then top everything with a tortilla again.
Press on the tortilla until you feel the cheese has melted everything together (about 1-2 minutes). Then flip over and cook for another 1-2 minutes.
Remove from pan, slice into pizza-esque slices, serve and enjoy!
