Ingredients
Chopped meat (1 lb)
Lettuce (1/2 head romaine)
Tomato (1 lg)
Avocado (1)
Lime (1)
red onion (1/2 of a small one)
salt
pepper
garlic powder
jalapeno
taco mix (1 package)
tostadas (1 package)
large soft burritos (1 package)
sour cream (1 small container)
mild salsa (1 jar)
shredded mexican or cheddar cheese
Finely chop lettuce.
Small dice tomato.
Finely dice jalapeno.
Small dice 1/2 of a red onion.
De-pit and de-skin the avocado and put into mixing bowl. Add the jalapeño and the red onion. Squeeze the juice out of the lime into the mixing bowl. Season with salt, pepper, and garlic powder. Mash up with a fork until the ingredients in the mixing bowl look like a guacamole mix.
In a pan, on high heat, add the chopped meat. Cook all the way through, using a spatula to chop it up and make into very small pieces as it cooks. Drain the meat of oil. Then add the taco mix and 1/2 a cup of water. Mix all around until fully coated with the taco mix and cooked throughout. (Sometimes I add extra cumin, chili powder, paprika, salt, pepper, garlic powder but this is NOT necessary)
On a clean surface, lay a burrito down. Then, using a dry measuring cup or something like it, take a scoop of the meat and place it on the burrito in a circle, keeping it as compact as possible. Flatten the meat into a thin but compact layer in the middle of the burrito (about the size of the tostadas) forming a circle. On top of that add a layer of the avocado. Then place a tostada on top. Then add a layer of sour cream on top of the tostada, use a knife to spread like you are buttering a bagel. Then add a sprinkle of lettuce, then add a sprinkle of the chopped tomatoes, then sprinkle with the shredded cheese.
Using your hands, fold in the outsides of the burrito all around the ingredients until they are completely covered.
In a non stick pan, turn heat on medium, add a concentrated sprinkle of cheese into the center of the pan (this will act a bit like glue for the burrito). Once the cheese is a bit melty, add the burrito (folded-in side down) on top of the cheese and let cook for 30 sec-1minute. Then flip over, and let it cook for another 30 seconds.
Remove from pan, using a large knife cut in half. Serve on a dish with a dipping bowl of salsa.
