Julie's Pesto & Mozz Stuffed Chicken

Ingredients

Chicken (thin sliced)

Pesto

Fresh Mozarella

Italian breadcrumbs

Egg


Preheat the oven to 350 degrees.


Scramble an egg in a mixing bowl.

Put a healthy amount of breadcrumbs onto a plate.

Dip the chicken into the egg, then bread and set to the side. Repeat for all pieces of chicken.


On a baking pan, spray with Pam. Then lay out a piece of chicken. Add a dollop of pesto and spread on the chicken. Then, add a few pieces of fresh mozzarella to the middle. Fold the sides of the chicken over and close with a toothpick. Flip over, toothpick side down on the baking pan.


Bake in the oven for 30 minutes.


Serve and enjoy!
