Ingredients
Chicken
avocado
cherry tomatoes
pineapple
shredded cheddar cheese
yellow rice (I use VIGO)
Tobasco sauce (if you like it spicy!)
Taco/fajita mix packet
OR:
salt
pepper
garlic powder
chili powder
cumin
paprika
Start the yellow rice.
Chop cherry tomatoes.
Chop Pineapple
Open avocado and chop into small pieces.
Add all the chopped ingredients into a bowl and mix.
Chop chicken into very small cubes.
On a skillet or in a pan, add olive oil and let it heat to high. Season pan with garlic, salt, pepper, chili powder, cumin, and paprika (OR just use a taco/fajita mix packet!) Add the chicken to the pan and let it cook all the way through, flipping chicken over occasionally to cook through.
Heat up tortillas.
On a tortilla, add chicken and top with shredded cheddar cheese, pineapple, avocado, and tomato mix. Serve with yellow rice. Dash with Tobasco sauce if you would like it a little spicy!
