Mad Hatter Mashed Potatoes

Ingredients

potatoes (4 Idaho potatoes for 4-6ppl)

butter (1/2 stick for 4 potatoes)

half and half (start with half a cup, then add as you see fit)

salt

pepper

chives*


Boil a pot of water, add salt.

Chop potatoes, skin on. They don't have to be super small, large cubes are fine.

Add the potatoes into the boiling salted water and cook for 10 minutes.

Test with a fork to see if potatoes are cooked, if soft to the touch take them out and drain them!

Put potatoes back in drained pot and add butter, salt, pepper and half and half. Mash with potato masher, OR I often will just use a spoon and a fork to mash. Stir with egg beater to smooth it out.


I like these potatoes chunkier. To make dryer and chunkier, mash less and use less half and half. To make softer and more whipped, mash more and use more half and half.


*Chop chives, and top potatoes to serve! (but just as delicious without the chives)
