Ingredients
Mahi Mahi (3-4 pieces)
Mango (2)
Red Bell Pepper (1)
Jalapeno (1)
red onion (1/2)
lime (1)
Garlic (2 cloves, minced)
salt
pepper
garlic powder
olive oil
Cut up the mango to remove the center.
With a spoon, scoop out the inside. Then chop into small pieces.
Chop red bell pepper into small pieces.
Chop jalapeno into small pieces.
Mince garlic cloves.
Put everything into a mixing bowl. Squeeze 1/2 to a full lemon on top, depending on how lime-y you want it. Season with salt and pepper. Mix all around in the bowl and set to the side.
In a non stick pan, on medium-high heat, add olive oil and season the pan with salt, pepper, and garlic powder. After two minutes, add the mahi mahi on one side. Let it cook for 5-7 minutes depending on thickness of fish. Flip over and cook for another 5-7 minutes.
While the fish is cooking, follow directions to make cous cous.
Once cous cous and fish are done, put cous cous on a dish, top with the fish, then take a couple of heaping scoops of the mango salsa on top. Serve and enjoy!
