Flank Steak
Jalapeno (1)

soy sauce (1/3 cup)
olive oil (1/2 cup)
lime (1)
garlic cloves (3-4, minced)
Preheat oven to broil (~550 degrees, or as high as your oven will go if lower than 550).
In a deep baking pan, lay the flank steak flat. Season with salt and pepper on both sides.
In a measuring cup, add olive oil, soy sauce, squeeze the whole orange and the whole lime, add the garlic, and season with salt and pepper. Then stir all together. Pour mixture over the steak.
Chop the jalapeno into small pieces (de-seed if you would like it to be less spicy, keep the seeds for more spice). Add the jalapeno on top of the steak and underneath. Grab two bunches of cilantro and add it on top of the steak. Cover with saran wrap and leave in the fridge for at least 45 minutes. You can also prep this the night before and let it sit covered for, at most, 24 hours.
When ready, uncover the baking dish, take off the cilantro, and put the steak in the oven. Cook for 8 minutes. Using tongs, flip the steak over and put back in the oven. Cook for another 8 minutes. You will know its read if the edges are crisping up.
Let rest for 5 minutes on a cutting board. Slice with the lines of the steak. Garnish with cilantro*.

*sometimes I will serve with cotija or feta cheese sprinkled on top!
