Ingredients
Chicken
Pesto (11 oz for 7 pieces of chicken)
Panko Breadcrumbs (2 cups per 7 pieces of chicken)
Shredded Mozzarella (your discretion)
salt
pepper
Preheat oven to 350 degrees.
Put pesto into mixing bowl.
Put panko breadcrumbs into another mixing bowl. Add salt and pepper. Add a handful of shredded mozzarella cheese. Mix it all together.
Lightly coat the chicken in the pesto. Then heavily coat it with the panko mix. Put it on a baking pan. Repeat steps with all pieces of chicken.
Once all the chicken is on the baking pan, take the panko mix and sprinkle it on top of any chicken that you can see the chicken. The idea is to fully cover the chicken in panko and cheese).*
Bake in oven for 30 minutes.
*at this point, you can cover in saran wrap and put the baking pan in the refrigerator. Throw it in the oven when you are ready to cook dinner!
