Sam’s Greek Gambas

(15 minutes prep, 30 minutes cook)


Ingredients

large tomatoes (4)

olive oil

lemon juice

cloves of garlic (4)

shrimp (1 pound, medium sized)

crumbled feta (1 cup)

lemon (1/2 of a whole lemon)

parsley

Salt

pepper

red crushed pepper

oregano to taste

couscous (1 cup)


Preheat oven to 450 degrees

Cut each tomato into eight slices and place in a large baking dish. Chop garlic and parsley. Add olive oil, chopped garlic, salt, pepper, red crushed pepper and oregano to baking dish and toss. Bake in oven for 20 minutes.


Take baking dish out of oven and stir in shrimp, parsley, and lemon juice. Sprinkle even layer of feta on top of mixture. Return to oven and bake for 10-15 minutes (until shrimp are pink and fully cooked).


While bake is finishing, prepare couscous. Serve shrimp mixture on top of couscous and enjoy!
