Ingredients
Sweet Italian sausage (4 links)
Broccoli rabe (1 head)
salt
pepper
garlic (4 cloves minced)
olive oil
chicken broth (1 cup)
butter (1 tbsp.)
pasta (1 lb. cavatelli or orecchiette)
grated parmesan cheese
Heat a pot of boiling water and make the pasta.
In a pot, on medium high heat, add 1 tbsp. of olive oil and 2 clove of minced garlic. Then add broccoli rabe. Season with salt and pepper and olive oil. Add 1/4 a cup of water, put a cover on the pot. Let it steam for 5 minutes, or until it is completely wilted.
Once wilted, remove broccoli rabe from the pot and place on a cutting board. Cut into pieces and add to a blender or food processor. Puree the broccoli rabe. Add 1/2 a cup of chicken broth and puree again.
Remove the casing from the sausage links. In the same pot you used to steam the broccoli rabe, on medium high heat, add the sausage in small pieces and add a bit of olive oil. Using a spatula, chop the sausage into as tiny pieces as you can while it cooks, chopping and moving around until the sausage is cooked through.
Then, add the pureed broccoli rabe pesto to the pot. Add another 1/2 cup of chicken broth. Add the remaining cloves of garlic. Season with salt and pepper. Then add the butter. Mix around and let cook for about 5 minutes on a high simmer.
When ready, put the sausage and broccoli rabe pesto over the pasta. Serve with grated cheese and enjoy!
