Sausage & Brussel Sprout Gnocchi

Ingredients

Gnocchi (1lb)

red onion (1)

Brussel sprouts (1 lb)

butter

garlic (2 cloves, chopped)

lemon (1/2)

sweet italian sausage (1/2 lb)*

grated cheese


Cut the ends off of the brussel sprouts. Then peel off the outside leaves, separating them. Discard the centers.


Cut red onion in half, then slice thin.


Take the sausage out of its casing.


Boil a pot of water. Season with salt for taste.


In a pan, on medium high heat, cook the sausage in its entirety, chopping up into small pieces as it cooks. Half way through cooking, add the chopped garlic.


Once the pot of water is boiling, add the gnocchi to the pot. Cook for 3 minutes.


In a steel pan, add 1 tbsp. of butter. Let butter get brown. After 3 minutes, start transferring the gnocchi into the pan. Don't worry about the pasta being fully drained when you transfer it to the pan, a little bit of water is good. Let the pasta cook, while consistently mixing it around, for about 2-3 minutes or until the pasta gets slightly golden brown. Then add in the Brussel sprouts and red onion. Season with salt and pepper. Add the lemon. Mix around all together until red onion gets a bit translucent. Lastly add the sausage and mix all together.


Serve, top with grated cheese, and enjoy!


*leave out the sausage part for a delicious vegetarian option!
