Shrimp, Pineapple & Tomato Skewers

Ingredients

Shrimp

Pineapple

Cherry Tomatoes

Fresh thyme

salt

pepper

garlic (3 cloves, minced)

red pepper flakes

olive oil


If using frozen shrimp, defrost the shrimp in cold water. Otherwise, peel fresh shrimp, leave tails on.


Cube pineapple.


In a mixing bowl, add the shrimp and season with olive oil, salt, pepper, red pepper flakes, fresh thyme, and minced garlic. Mix around with your hands so all the shrimp is fully coated. Let marinate for 10 minutes.


Then, using long skewers, skewer the shrimp across the middle, then add a piece of pineapple, then a cherry tomato and repeat the process 3x. This should finish the skewer with a third shrimp.


Repeat process until all skewers are made.


Grill skewers on each side for 2-3 minutes.


Serve and enjoy!
