Ingredients
Rice (jasmine) (1 cup)
Chop meat (1-1.5 lbs)
Radishes (4)
Scallions
Cojito cheese
Tortillas
salt
pepper
garlic powder
red wine vinegar
sesame seeds
brown sugar (1 tbsp.)
soy sauce (4 tbsp.)
Chili garlic sauce* (1 tsp)
Cook rice (follow instructions on rice bag).
While rice is cooking, slice radishes thin. Put in a bowl and add a healthy amount of red wine vinegar. Add pepper. Mix together and let sit.
Slice scallions.
Grate cojito cheese.
Put chop meat in a pan on medium heat. Cook through and chop into very small pieces. While cooking, season with pepper, sesame seeds, and garlic powder. Stir and cook through.
Add soy sauce and brown sugar and mix all together. Cook for another 1-2 minutes*
Heat tortillas. Then assemble! I put rice on tortilla first, then meat, then radishes, then cheese, then top with scallions!
*At this point if you would like it spicy, add the chili garlic sauce and mix thoroughly in with the meat.
