(30 min, but the longer you let it cook the more delicious it is!)
Ingredients
Ground Pork (1lb)
Ground chop meat (2lb)
Black beans (1 small can)
Yellow onion (2)
Diced canned tomatoes (1 large can)
Jalapeño (1)
Canned green chilis (1)
Yellow Rice
Dried Chile Guajillo (optional)
any chili mix (2 packages)
chopped garlic (2 cloves)
salt
pepper
olive oil
shredded cheddar cheese
Chop onion and jalapeño.
Follow directions for Yellow Rice (usually takes 25 min to cook)
Add olive oil to bowl, add onion, chopped garlic, jalapeño, salt and pepper and let sautée for a bit.
Add pork and chop meat and chop as small as you desire with your spatula. Cook until pinkish/brown.
Add canned tomatoes, black beans, canned green chilis. Cook for a bit then add chili mix and dried Chile.
Cook on simmer for as long as you can! The longer you cook it the better.
Top with shredded cheddar cheese and fresh jalapeño!
